Foodie Friday

On the advice of a very good friend of mine (and you know who you are) I have decided to devote one day a week to a fabulous recipe. I have dubbed thee “Foodie Friday”! Da Da Da Dummmmm!!! Oh, and it gets better; not only will I showcase my own personal recipes (which I have shamelessly boosted from various magazines, websites, family and friends) but I will also allow my faithful followers (all three of you) to contribute your own recipes for possible publication in the very prestigious Foodie Friday. Just shoot me an email with your most fabulous and fast recipes and I will cook and serve them to my family with a full report of how it was received. Or if you want tons of karma points and a definite publication, feel free to bring me a sample as I am not above bribery :)

For the inaugural post I have decided to feature one of my newest obsessions: The Donut Muffin.
As many of you know I am obsessed with the Food Network. One of my new favorite shows is “The Best Thing I Ever Ate” and it showcases famous chefs and FN personalities and their favorite foods and establishments. In the episode “Snack Attack”, Candace Nelson, the founder of Sprinkles cupcakes (the BEST overpriced cupcake money can buy in my opinion), turned all of the viewers onto The Donut Muffin from the Downtown Bakery and Creamery in Healdsburg, CA. It was this giant muffin covered in cinnamon and sugar. All of the goodness of a donut without the frying! Pure genius! About 30 seconds into the segment I decided I must have one. Unfortunately I lacked the means for an impromptu trip to Cali, so I did the next best thing: I googled it. I was surprised to find several recipes for donut muffins, especially because I’ve never heard of such a wonderful concoction. I settled on the recipe from the Rabbit Hill Inn Bed and Breakfast. I figured since it’s a B&B it had to be good. I mean, come on, “Breakfast“ is in their name. And it was that good!


Without further adieu, I give you The Donut Muffin….


Rabbit Hill Inn Donut Muffin Recipe
yield 24 muffins
Dry Ingredients mixed in bowl:4 cups all purpose flour2 tsp baking soda1 tsp nutmegWet ingredients in separate bowl:1 cup oil4 eggs2 cups sugar2 cups sour cream2 tsp vanilla
Topping mix in separate bowl:1 cup sugar1 Tbsp cinnamon1/2 cup melted butter in separate bowlMethod:
· Wisk dry ingredients together in bowl
· Wisk wet ingredients together in separate bowl
· Gently fold wet & dry mixtures together with spatula until just combined
· Spray muffin tins with cooking spray
· Preheat oven to 350 degrees
· Wisk using your hands, scoop out batter and fill each muffin to top.
· Bake 15-20 minutes (test for doneness
· While muffins are baking, stir together the topping ingredients. Set aside.
· When muffins are cool enough to handle, take each muffin and dip tops into melted butter,
· Dip into cinnamon/sugar mixture. Coat tops generously. Let sit for a few minutes.
· Now they're ready to enjoy!

As you can see I am true to my word and shamelessly boosted this directly from their website. However I don’t think I can get sued because I admitted to it and also gave them credit :) But me being me, I had to make it my own in some very small ways. First of all I found 1 tsp of nutmeg to be a little overpowering so if you’re not a nutmeg fan I suggest using ½ tsp of nutmeg and ½ tsp of cinnamon. Also I highly recommend a liberal dousing of the cinnamon-sugar mixture over the entire muffin. Oh and I didn’t dip the muffins into the butter. I have a handy-dandy pastry brush that I had been dying to use. It’s tiny, green and oh-so-cute! I also like the fact that this recipe can easily be halved for 12 muffins. I made the entire 24 and had so many that I took the leftovers to work. FYI, they are fabulous straight out of the oven but they’re just as good the next day.

I say it a lot...

...I know I'm not the only working mom but...


Welcome to my blog! I decided to start my own blog for several reasons:

1. Everybody else is doing it and I cave to peer pressure. Don't tell my kids. I want them to view me as a positive role model, at least for now.

2. I need an outlet for my random thoughts and witty banter. I have lots of random thoughts, ask anybody. I'm pretty witty too. I'll make you laugh out loud. That's a promise.

3. I have 2 kids and I need an outlet for that too. I was going to mention my husband also but I really didn't want to get into a fight over it. I don't like fighting and I know he doesn't like sleeping on the couch.

4. I want to share deals I find so you can benefit from my bargain savviness. Is that a word? If not, it definitely should be.

5. I want to share recipes and I want you to share some with me! I've recently discovered that I can cook! And I like it! Who knew? Especially since I've spent the better part of our marriage trying to convince my hubby that I was missing the cooking gene.

So that's pretty much it. It's about me and things I want to talk about! Yay! I know you are as excited as I am...
